Our butters are quality controlled from start to finish, and we store them in a temperature controlled warehouse. We also can provide the options of having our oils and butters as conventional,organic and internally stabilized which solves oxidation problems and enhances the shelf life of the products. 

Keep in mind that all  butters are a 100% natural product, and will have slight variations in color, and sometimes odor dependent on season, geographic source of the butter within a country or region. We have checked the organoleptic properties of each of our reference samples and the color and smell are within  acceptable parameters for a good quality product when we ship them. 

What about graininess in butters? 

Graininess in butters is a fairly common phenomena caused by different crystallization processes taking place at the same time in the butter. It is due to various fatty acids melting and cooling at different rates and thus providing a pool of different crystals, which can affect the color and texture of a natural butter. The crystallization can occur immediately or can appear months after the product has been made. Especially if the product has experienced temperature variations during storage and/or  transportation. If cooling occurs slowly, the fatty acids can crystallize into large clumps causing graininess. If cooling occurs rapidly, in a process known as tempering, fatty acids will not have time to crystallize, creating a finished product which is smooth. This does not reflect the quality of the product, as it is a reaction to temperature fluctuations.

Tempering Natural Butters to solve graininess

The proper method for alleviating graininess is the process known as TEMPERING: To temper your natural butters, like shea butter, heat your butter to 176 F (  80 °C) so that no crystal structure subsists. Hold the butter at that temperature and stir occasionally for 15 - 30 minutes. The steady heat of tempering will help completely melt the fat crystals without degrading the quality of the butter.
