Potassium Sorbate 50% is an aqueous solution of potassium sorbate. The Food Chemicals Codex functional uses are: antimicrobial agent and preservative. Potassium sorbate is affirmed as GRAS 21 CFR 182.3640, is used as a mold and yeast inhibiting ingredient in the process cheese industry 21 CFR 133 and in the sausage industry 9 CRF 317.
It is also used as preservative in the production of jams and jellies as stipulated in 21 CFR 150.
